2 cups fresh blackberries

1 teaspoon vanilla
12 egg roll wrappers
2+ cups vegetable oil for frying
1/4 cup powdered sugar for dusting

DIRECTIONS
Blackberry Filling:
In a saucepan over medium heat, toss in the blackberries, sugar, lemon juice, and 3 tablespoons of water.
Let it cook until the blackberries start bursting.
Mix the remaining water with cornstarch, then stir it into the blackberry mixture until it thickens up.
Cream Cheese Filling:
Beat the cream cheese, sugar, vanilla, and lemon juice together until it becomes fluffy and well mixed.
Assemble:
Lay out an egg roll wrapper.
Spread some of the cream cheese mixture onto it, and then spoon some blackberry filling on top.
Dab the edges with water to help seal it, then fold and roll it up like a burrito.
Frying:
Heat up your vegetable oil in a pan.
Once it's hot, carefully drop in the egg rolls and fry them until they turn golden brown.
Take them out and let them drain on some paper towels.
Finally, give them a good dusting of powdered sugar.
