Blackberry Cream Cheese Egg Rolls

  INGREDIENTS

For The Blackberry Filling:


2 cups fresh blackberries
1/3 cup sugar
1 tablespoon lemon juice
4 tablespoons water, divided
3 tablespoons cornstarch

For The Cream Cheese Filling:

8 oz cream cheese, room temperature
1/3 cup sugar
1 teaspoon lemon juice
1 teaspoon vanilla
12 egg roll wrappers
2+ cups vegetable oil for frying
1/4 cup powdered sugar for dusting

DIRECTIONS
  1. Blackberry Filling:

    • In a saucepan over medium heat, toss in the blackberries, sugar, lemon juice, and 3 tablespoons of water.

    • Let it cook until the blackberries start bursting.

    • Mix the remaining water with cornstarch, then stir it into the blackberry mixture until it thickens up.


  2. Cream Cheese Filling:

    • Beat the cream cheese, sugar, vanilla, and lemon juice together until it becomes fluffy and well mixed.


  3. Assemble:

    • Lay out an egg roll wrapper.

    • Spread some of the cream cheese mixture onto it, and then spoon some blackberry filling on top.

    • Dab the edges with water to help seal it, then fold and roll it up like a burrito.

  4. Frying:

    • Heat up your vegetable oil in a pan.

    • Once it's hot, carefully drop in the egg rolls and fry them until they turn golden brown.

    • Take them out and let them drain on some paper towels.

    • Finally, give them a good dusting of powdered sugar.

  5. Serving:

    • Serve them up hot and crispy!
